It’s been a while since I have felt inspired enough to discuss my love of food but these past couple of months I have been in the kitchen cooking like it is going out of style. I don’t know if it was my hubby’s constant hints about my lack of cooking or if I watched too much Food Network but I am inspired to actually go into the kitchen and cook a meal.I remember when I got married my mother in law actually hinted to me that I needed to cook—every night. For a while after we got married, I did exactly that. Then after a year or two I got lazy and started to buy frozen meals to supplement nights I did not feel like cooking..
Before I would make the same dishes week after week and I started to get bored and that drove me to want to go out to restaurants to try something new and interesting. In the last couple of months, I have made everything from pulled pork sandwiches to a spicy cajun rice side dish. Sometimes I go to actual cookbooks while other times I go to food blogs like Mangoes and Chutney or Divas Can Cook to find recipes for food I have never tried.
I got this recipe from one of my favorite new sites Pink Lady Gumbo when I was searching for a new way to make chicken. I was tired of baking, frying or grilling chicken so when I saw this recipe I knew it would be a hit in my household. It is a spicy but sweet combination of pineapples, chicken, peppers, brown sugar etc that tickles your taste buds. This recipe is not only great but ALL of my children ate several plates and my husband even told me I should definently make it again.. #WINNING!
Last night I decided that I wanted some salmon but with a twist so I decided to make something that would pop in my mouth…mango salsa. I love this because it has a spicy but sweet taste that helps me eat healthy (i.e. salmon) but still “tickling” my taste buds…

The recipe is pretty simple you combine the following ingredients into a bowl and chill for at least 30 minutes..
- 1 jalepnos (seeded and diced)
- 1/4 red onion
- 1/4 green pepper (seeded and diced)
- 1 tablespoon Lime Juice
- 1 teaspoon Lemon Juice
- 2 Mangos (peeled and diced)
- 1 teaspoon of brown sugar

I am not some Chef Extradoinaire but I do like to experiment with new (healthy) dishes. This week I am going to try out a new recipe, Morrocan Chicken.
